Tomatoes with Pesto (Dennis Malloy)

Ingredients / Pesto

2 cups basil leaves
4 Tbsp toasted pine nuts
cup parmesan or pecorino romano cheese
cup olive oil
Pinch of salt
pinch of black peppers


Directions / Pesto

Put all ingredients in food processor, and pulse until a coarse chopped consistency is achieved.

Directions / Tomatoes

  1. Slice Jersey tomatoes and top with Pesto & toasted pine nuts.
  2. Crumble feta, gorgonzola, or goat cheese on top.
  3. Drizzle with olive oil.
